  • Description: 4 cod fillets 8 medium potatoes (peeled and roughly diced) 3 small onions, peeled 20 cockles 1 oz melted butter Salt / Pepper 4 sprigs thyme Wash and scrub the cockles well discarding any which are open. Place them in a saucepan with just enough (slightly salted) water to cover and bring to the boil, shaking the pan periodically. Cook until all the cockles have opened. Discard any that do not open. Strain the cockles once they are cool enough to handle, keeping the liquid. Remove the cockles from their shells. Parboil the potatoes and onions and drain well. Pre heat the oven to 400F. In a well buttered casserole dish, place the cod fillets and top each with the thyme. Place the potatoes and onions around the cod fillets, and then spoon the cockles over the top. Pour the liquid from the cooking of the cockles over all the ingredients. Finally, pour the melted butter over the top of the ingredients Cover the dish with a sheet of greaseproof paper to avoid burning and then cover that with a lid. Bake for 30-35 minutes, until the cod fillets and tender and cooked through. Remove the sprig of thyme then serve.
