What you need:
-Diced/Skinned/Boneless pieces of Aussie... moreWhat you need:
-Diced/Skinned/Boneless pieces of Aussie Salmon
-3x cloves of crushed garlic
-3cm piece of ginger
-small amount of corriander
-a dolop of sweet chilli sauce
-1x egg
-breadcrumbs
-salt/pepper for seasoning

1-Mix all the ingredents in a blender, leaving the breadcrumbs to the end. Mix in an amount of breadcrumbs to make the mixure moist, but not dry.
2-Mould mixure into patties, and roll in more breadcrumbs
3-Firm the patties in the fridge until firm (15min)
4-Heat some butter & oil in deep pan, and shallow fry the patties turning only once. (if your patties are thick, you may need to finish the cooking process in the oven?)
5-Serve with either Veg's or salad, but don't forget the Garlic Aoili sauce... MMMMmmmmmm
